Preheat your oven to 170C. Grease an eight inch cake tin and line the base with parchment. In a bowl, mix the flour, baking powder and baking soda. Keep it aside. In another bowl, whisk the sugar, oil, orange juice, vanilla essence, and orange zest until smooth. Add a pinch of orange food color to enhance the shade. Add the eggs one at a time, or mix in curd if you want an eggless version. Gently fold the dry ingredients into the wet mixture in two portions. Stir only until blended.
