Method
Start by preheating your oven to 180°C. Grease and line an 8-inch round cake tin with butter paper. Sift together flour, cocoa powder, baking powder, and baking soda. Sifting helps remove lumps and ensures a smooth batter. In a large bowl, beat the eggs and sugar until the mixture becomes pale and fluffy. This step is important because it adds air to the batter, giving the cake its sponge-like texture. Use an electric beater for best results and beat for about 5 to 7 minutes. Add oil and vanilla essence to the egg mixture. Mix gently. Now fold in the dry ingredients in batches. Do not over-mix. Use a spatula and fold lightly to maintain the air in the batter. Warm the milk slightly and add it gradually to the mixture. Fold gently until everything is well combined and smooth. The batter should be light and slightly flowing. Pour the batter into the prepared tin and tap it lightly to remove air bubbles. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean. Once baked, allow the cake to cool in the tin for 10 minutes. Then transfer it to a wire rack to cool completely. You can serve it plain, dusted with powdered sugar, or layer it with whipped cream and chocolate ganache for a richer dessert.
This chocolate sponge cake stays moist for two to three days when stored in an airtight container. Whether you enjoy it with tea or use it as a base for a decorated cake, it delivers a soft crumb and deep chocolate flavor every time.
